Cuban Black Bean Soup

Here is a recipe I had promised to Skylark - we made this a couple of weeks ago, and I see this as a good recipe for the pressure cooker onboard.

Cuban Black Bean Soup

Serves 6

3 cans black beans, rinsed (or cook 'em from dried first in the pressure cooker)

3 tbs olive oil
6 garlic cloves, crushed, minced (well I like garlic  ::)
1 cup chopped onions
1/2 tsp cumin
1/2 tsp coriander seeds
1/4 tsp turmeric
1/2 tsp paprika
1 cup chopped carrots

1 medium green pepper, chopped
salt and pepper (to taste, or add at the end)
1/4 cup fresh parsley (dried, use 2tbs)
1 cup orange juice
1 can stewed tomatoes (or chopped tomatoes), drained
1 1/2 cups brown rice
2 1/4 cups hot water

In the pressure cooker, saute the onions, garlic and spices in the oil, until the onions are soft. Add the carrots, saute for 3 or 4 more minutes. Add the peppers and saute until they are softening. Add the rest of the ingredients except the cooked or canned beans.

Cover the cooker, lock the lid, and raise the pressure to the first setting. Cook under pressure for 20 minutes. Let the pressure drop of its own accord.

Stir in the cooked beans. Add more orange juice (or tomato juice) if you like it soupier.

Serve with hot sauce and yogurt (another great boat food!)


Some variations might be:
Depending on your canned tomato brand, keep the liquid (makes it soupier)
Or reduce the other liquid if you like more tomato flavor
Use white rice instead of brown (reduce cooking time by a few minutes)
Throw in a hot chili pepper!
Use curry powder if you don't have cumin, turmeric and coriander
Serve with grated cheddar or other sharp cheese
Add, subtract veggies, whatever you have on hand
Serve with bread, over bread, in taco shells, on tortillas...
