No reason that shouldn't work.  How are you planning on mounting the pole to the transom of the RIB?

I would think making the light pole drop into a piece of PVC pipe that is attached to the transom and then drilling a hole through the PVC pipe and the pole and using a fast pin would be one of the simpler ways and would keep the pole oriented fore-aft properly, since the fast pin would prevent it from rotating.

Make the lights LED lights, and switch them separately, you could run them a long time on the motorcycle battery.
