Brothers Bahamas Bean Salad

Got this recipe from Jan and Mike (and dog Beauty) while passing through Cape May. Great way to preserve veggies that are about to go bad as the vinegar pickles them. This will stay good for a few days out of the fridge. This was a big hit when my three "little" bros(6'+, 200lbs ea) came to stay with me aboard my Bayfield 25 in the Bahamas... Beans beans the magical.....

1)Take a can of kidney beans and can of Chick-peas (Garbanzo beans), open, drain, fill can with water, shake, pour out (rinses).

2)Add beans to resealable container. Add two parts vinegar, one part veg oil so that things are a third or so covered.

3)Add whatever veggies you like. Peppers, onion, broccoli are all great. Garlic is a must. Soft veg like lettuce I don't think would work. Veggies that are "about to turn" can be added and life extended.

Eat alone or on crackers with cheese. Enjoy!
